I've mentioned before how much I love one-pot dishes, especially when they involve cooking pasta in broth and water. There's something special about pasta cooked in a skillet with so many other delicious ingredients. The pasta soaks up not just the water and broth but the flavors as well.
This Skillet Penne with Chicken and Broccoli is from Cook's Country, which is one of the only magazines I continue to pay for. The recipes are tested so many times that I've rarely comes across one that isn't a winner. This was no exception. The sauce was a little thin, but I only had 7 ounces of ziti so that may have had something to do with it. I'm sure the leftovers the next day were better, but since there was only enough for SP I couldn't tell you. :) He's a lucky man - the flavors in this were outstanding. You can't go wrong with chicken, pasta and broccoli in my book.
Skillet Penne with Chicken and Broccoli
As seen in Cook's Country August/September 2012
1 pound boneless, skinless chicken breasts, sliced thin
Salt and pepper
2 tablespoons olive oil
1 onion, chopped fine
6 garlic cloves, minced
1/4 teaspoon red pepper flakes
1/4 teaspoon dried oregano
1/2 cup dry white wine
2 1/2 cups water
2 cups low-sodium chicken broth
8 ounces penne
8 ounces broccoli florets, cut into 1-inch pieces
2 ounces Parmesan cheese, grated, plus extra for serving
Pat chicken dry and season with salt and pepper. Heat 1 tablespoon oil in a 12-inch non-stick skillet over medium-high heat until just smoking. Add chicken in a single later and cook, without stirring, until beginning to brown, about 1 minute. Stir chicken and continue to cook until nearly cooked through, about 2 minutes. Transfer to a bowl and keep warm.
Add 1 tablespoon oil to now-empty skillet and heat over medium heat until shimmering. Add onion and 1/2 teaspoon salt and cook until softened, about 5-7 minutes. Stir in garlic, pepper flakes and oregano and cook until fragrant, 30 seconds. Stir in wine and simmer until nearly evaporated, 1-2 minutes. Stir in water, broth and penne. Increase heat to medium-high and cook at a simmer, stirring often, until penne is nearly tender, about 12 minutes.
Stir in broccoli and cook until penne and broccoli are tender and sauce has thickened, 3-5 minutes. Stir in chicken, along with any accumulated juices and cook until warmed through, about 1 minute. Off heat, stir in Parmesan cheese. Season with salt and pepper to taste. Serve immediately.

BLT Wraps
One of SP's favorite sandwiches in a BLT. As much as I love a traditional BLT on white bread, it can be a messy sandwich to eat. Enter the BLT Wrap. All the flavors of a BLT but wrapped snugly in a tortilla.
I ended up making these for dinner on Friday so I cut the recipe in half since we wouldn't need leftovers. These were incredibly easy to make, although I did have a minor mishap with the bacon. The original recipe calls for cooking the bacon in the microwave but my bacon wasn't cooking properly so I finished it in the toaster oven. I recommend cooking the bacon in either the toaster oven or regular oven for more even cooking.
BLT Wraps
Slightly Modified from Cook's Country, August/September 2012
12 ounces thick-cut bacon
1/4 cup mayonnaise
1 tablespoon Dijon mustard
2 romaine lettuce hearts (12 ounces), leaves trimmed to 8 inches long
1 pint cherry tomatoes, halved
4 (10-inch) flour tortillas
Cook bacon until crispy.* Allow to cook slightly then chop into bite-size pieces.
Whisk mayonnaise and mustard together in large bowl until combined. Add lettuce and tomatoes and toss to coat evenly with dressing. Lay tortillas on counter and divide lettuce, tomatoes, and bacon among tortillas. Roll tightly and serve.
*I like to use the toaster oven but for this amount of bacon I recommend using the oven. Preheat to 350 degrees and line a baking sheet with tin foil for easy clean-up. Place a cooling rack on the baking sheet and lay the bacon on the rack. Cook until desired crispiness, checking often to make sure the bacon isn't burning.
Weeknight Spaghetti and Meatballs
One of the only magazines I continue to subscribe to is Cook's Country. I love their recipes but the real reason is they don't make their content available on their website. That irks me quite a bit, but it's a good move on their part since it forces folks to buy their magazine. SP was looking through the most recent issue and came across this one for Weeknight Spaghetti and Meatballs. He's a big spaghetti and meatballs fan but he also thought it would be great because it's a one-pot meal. Score!
This couldn't have been easier to make. SP wished there had been more spaghetti and less meatballs, so I need to figure out how to make that work next time. I felt like the meatballs needed more seasoning than just the garlic, so I added salt, pepper and Italian seasoning. I had the meatballs rolled in about 10 minutes and put them in the fridge to stay cold until I was ready to cook. I think that was a good step because the meatballs held together perfectly while cooking, so I modified the recipe below.
Baby Girl absolutely loved this dish. She had thirds of the spaghetti (don't you love that toddlers call spaghetti "pasketti?") and we already know how much she loves meatballs and these were no exception. She was covered from head to toe in red sauce, which made for some adorable pictures.
I'll be making this often, especially in the fall and winter.
Weeknight Spaghetti and Meatballs
Slightly Modified from Cook's Country
1 pound meatloaf mix (ground beef, pork and veal)
1/3 cup panko
1 large egg, lightly beaten
5 garlic cloves, minced
1 teaspoon dried Italian seasoning
Salt and pepper to taste
2 tablespoons olive oil, divided
1 (28-oz) can crushed tomatoes
2 cups water
8 ounces spaghetti, broken in half
1/4 cup fresh basil, chopped
Grated cheese for serving
Combine meat, panko, egg, half the garlic, Italian seasoning and some salt and pepper in a bowl and knead gently until combined. Form meat into 48 meatballs, about 1-inch around. Refrigerate for 20 minutes to firm up the meat.
Heat oil in a large, 12-inch non-stick skillet with high sides over medium heat until just smoking. Cook meatballs until well browned all over, about 5 minutes. Transfer meatballs to a paper towel-lined plate. Drain fat from the skillet.
Add 1 tablespoon oil to the now-empty skillet over medium-high heat. Add the remaining garlic and cook until fragrant, about 30 seconds. Add tomatoes, water, pasta, salt and pepper and bring to a boil. Cover, reduce heat to medium-low and cook, stirring often, until pasta begins to soften, about 7 minutes.
Return meatballs to the skillet and simmer, covered, until meatballs are cooked through and pasta is al dente, about 5 minutes. Off heat, stir in basil. Serve with grated cheese.
Buffalo Chicken Quesadillas
SP loves any recipe that involves buffalo chicken so when I saw this recipe in the August/September 2011 issue of Cook's Country I immediately put it on the menu. 
Not only is it easy to put together, it's got tons of flavor. As expected, SP loved it. I can only handle so much blue cheese and Frank's before the flavors become monotonous. But if you love buffalo chicken you will love this recipe. I added some shredded Mexican cheese because I didn't want the blue cheese to overwhelm everything else.
Buffalo Chicken Quesadillas
Modified from Cook's Country August/September 2011
4 ounces blue cheese, crumbled (1 cup)
1 celery rib, sliced thin
1/4 cup sour cream
2 scallions, sliced thin
3 tablespoons unsalted butter
1 1/2 pounds boneless, skinless chicken breasts, trimmed and cut into 1-inch strips
1/3 cup Frank's hot sauce
4 (10-inch) flour tortillas
Shredded Mexican blend cheese
1 tablespoon vegetable oil
Combine blue cheese, celery, sour cream, and scallions in a bowl. Melt butter in 12-inch nonstick skillet over medium heat. Add chicken and hot sauce and simmer until chicken is cooked through, 6 to 8 minutes. Transfer chicken mixture to a bowl. Using 2 forks, shred chicken into bite-size pieces. Wipe out skillet.
Working one at a time, spread one-quarter of the blue cheese mixture over half a tortilla, leaving 1/2-inch border around the edges. Top with one-quarter of chicken mixture and a handful of shredded cheese. Fold tortilla over filling, pressing firmly.
Heat 1 1/2 teaspoons oil in now empty skillet over medium-high heat until shimmering. Add two tortillas to the skillet, cooking until brown and crisp on both sides, about 1 to 2 minutes per side. Transfer to cutting board and repeat with remaining quesadillas. Cut into wedges and serve. 
Spaghetti with Summer Vegetable Sauce
My basil plant went crazy a few weeks ago so I decided to make pesto and freeze it. When I was trying to come up with a meal plan for the week I saw this recipe for Spaghetti with Summer Vegetable Sauce and remembered the pesto. Done and done. 
Even though the recipe calls for large zucchini and summer squash, I felt there was too much of each and not enough tomato. Next time I'll use smaller squash and up the tomatoes. Also, I hate when tomato skin loosens from the flesh so I tossed the tomatoes in at the end, along with the pesto.
All in all this was a delicious and easy meal. Even SP, a spaghetti hater (I don't know what's wrong with him), cleaned his plate.
Spaghetti with Summer Vegetable Sauce
Very slightly modified from Cooks Country, August/September 2011
3 tablespoons unsalted butter
1 onion, diced
1 small summer squash, halved lengthwise and sliced thin
1 small zucchini, halved lengthwise and sliced thin
2 garlic cloves, minced
1/2 cup dry white wine
salt and pepper
1 pound spaghetti
6 tablespoons basil pesto
12 ounces cherry tomatoes, halved
Grated cheese
Bring water and some salt to in a boil in a large pot. Cook pasta according to package directions. Reserve 1/2 cup of cooking water and drain pasta. Return to the pot.
Melt butter in a large skillet over medium high heat. Add onion and cook until softened, about five minutes. Stir in squash and zucchini and stir until softened, about 3-5 minutes. Add garlic and cook until fragrant, about 30 seconds. Add wine, 3/4 teaspoon of salt, and 1/2 teaspoon pepper. Cook until liquid is reduced, about 2 minutes.
Toss vegetables, tomatoes and pesto with pasta, adding reserved pasta water to thin the sauce as needed Serve with grated cheese. 
Spicy Scallion and Brie Burgers
I love a good burger. This is nothing new if you've read my blog recently. Someone on my cooking board recently asked for burger recommendations and these Spicy Scallion and Brie Burgers were mentioned. I immediately put them on the menu for the following week. I love anything with Brie in it. 
I left out the jalapeno in the scallion paste. It was still spicy from the cayenne and I figured that was enough heat for me. The Brie melted nicely and added a really nice flavor to the meat.
Spicy Scallion and Brie Burgers
1 1/2 pounds ground beef
Salt and freshly ground pepper
4 ounces Brie, rind removed, cheese cut into 4 slices
1/4 cup Spicy Scallion Paste (recipe below)
Vegetable oil, for brushing
1/4 cup mayonnaise
4 hamburger buns, split
Tomato slices and lettuce, for serving
Light a grill. Season the ground beef with salt and pepper and form into eight 4-inch patties that are slightly thicker in the center. Top 4 of the patties with a slice of Brie and a scant tablespoon of the scallion paste. Top with the 4 remaining patties, pinching the edges to seal.
Brush the burgers with oil and grill over high heat, turning once or twice, about 8 minutes for medium-rare meat.
Meanwhile, mix the mayonnaise with the remaining scallion paste. Grill the buns until toasted. Spread the mayonnaise on the bottoms of the buns and top with the burgers, tomatoes and lettuce. Close the burgers and serve.
Spicy Scallion Paste
4 scallions, thinly sliced
2 garlic cloves, minced
1 fresh hot chile, seeded and minced
1/2 teaspoon finely grated lemon zest
1/4 teaspoon cayenne pepper
2 tablespoons extra-virgin olive oil
1/2 teaspoon salt
In a small bowl, combine the scallions with the garlic, chile, lemon zest and cayenne, mashing slightly with the back of a spoon. Stir in the olive oil and salt. The paste can be refrigerated for up to 2 days.
I served the burgers with oven fries:
I used a new recipe from Cook's Country and did a much better job getting them evenly brown. I'm still working on cutting the fries evenly.
Crispy Oven Fries
Cook's Country
4 russet potatoes (6 to 8 oz. each), peeled and cut into 1/2" slices
6 tablespoon vegetable oil
1 tablespoon cornstarch
1 teaspoon salt
Adjust oven rack to lowest position and heat oven to 450 degrees.
Place potatoes in a bowl, wrap tightly with plastic, and microwave until translucent around edges, 3 to 5 mins, shaking bowl half-way through to redistribute potatoes.
Transfer potatoes to cooling rack and thoroughly blot dry with paper towels. Coat rimmed baking sheet with 5 tablespoons of oil. Transfer to oven and heat until just smoking, 5 to 7 mins. Meanwhile, whisk remaining oil,cornstarch and salt in large bowl. Add potatoes and toss to coat.
Arrange in single layer on hot baking sheet and bake till deep, golden brown and crisp, 25 to 35 mins, flipping potatoes half-way through cooking time. Transfer to paper towel-lined plate and blot with additional paper towels.
Skillet Meatballs and Noodles in Creamy Herb Sauce
I love easy meals and Cook's County seems to have plenty of those in their magazine. Not a lot of ingredients, but excellent flavor and easy prep are key for me these days. This meal didn't disappoint.
This is actually the second time I made this dish, but the first time I cooked it and then left it covered on the stove until I'd put Baby Girl to bed. Not a good idea, as the noodles absorbed all the sauce and the dish was rather dry. This time I made it and we ate immediately. And look - it's a one-skillet meal. Score!
Skillet Meatballs and Noodles in Creamy Herb Sauce
Cook's Country
1 pound ground beef (85% or so)
1 package garlic and herb Boursin cheese
Salt and pepper
Vegetable oil
1 onion, chopped fine
2 tablespoons all purpose flour
3 1/2 cups low sodium chicken broth
8 ounces egg noodles
1/4 cup white wine
1/4 cup finely chopped fresh chives
Combine beef, 5 tablespoons Boursin cheese, 3/4 teaspoon salt, and 1/4 teaspoon pepper in a medium bowl and knead gently until combined. Form mixture into 1 inch meatballs. Heat oil in large nonstick skillet over medium-high heat until just smoking. Cook meatballs until well browned all over, about 5 minutes. Transfer meatballs to plate and pour off all but 1 tablespoon fat from pan.
Cook onion in reserved fat until browned, about 6-8 minutes. Stir in flour and cook until golden, about 1 minute. Add broth, noodles, and wine and bring to a boil. Cover, reduce heat to med-low, and cook, stirring often, until pasta begins to soften, about 5 minutes. Add meatballs and simmer, covered, until meatballs are cooked through and noodles are al dente, about 4 minutes. Turn off the heat and stir in remaining Boursin cheese and chives. Season with salt and pepper.
