Baked Chicken Burritos with Sour Cream-Poblano Sauce

I've had this recipe for Baked Chicken Burritos with Sour Cream-Poblano Sauce bookmarked for ages. I put it on the menu a few times only to swap it out for something else before we even got to the grocery store. I think the ingredient list was holding me back, although when you look at it more closely you see most are spices and things I already have on hand.

The other thing holding me back was time. This is not a weeknight meal. I started cooking the filling for the burritos and an hour later I was just finishing up the sauce. I made these on a Saturday afternoon and when it was time to eat all I had to do was wrap up the burritos and bake them off, then reheat the sauce and the refried beans I'd made to go with them.

We loved these. Absolutely loved them. I can't wait to make them again, which is saying a lot for a burrito (not typically my favorite Mexican dish). The tortilla was crispy, the filling was healthy and flavorful and Baby Girl finally realized she loves beans, inhaled the filling and asked for more.

I only made two minor changes - I increased the amount of chicken broth in the sauce since mine was very thick and I added a diced tomato for color and a little freshness. I also roasted the peppers on our charcoal grill over a small fire. It was so easy - just put them on and leave them alone. I checked on them every 10 minutes or so until they were nicely charred on the outside. No smoky pepper smell in the house and easy cleanup.

Baked Chicken Burritos with Sour Cream-Poblano Sauce

For the burritos:
1 tablespoon canola oil
1 large onion, diced
1 lb ground chicken
3 cloves garlic, minced
1 tablespoon tomato paste
1 can black beans, drained and rinsed
1/4 cup water or beef broth
1/2 teaspoon cumin
1/2 teaspoon oregano
1 1/2 teaspoons chili powder
1/8 teaspoon cayenne
1 teaspoon brown sugar
Kosher salt
1 cup shredded Monterey Jack or cheddar cheese
4 burrito-size tortillas
Cooking spray

For the sour cream-poblano sauce:
2 poblano peppers
2 tablespoons butter
2 tablespoons flour
1 1/4 cups chicken broth at room temperature
1/2 cup sour cream (light is fine) or non-fat Greek yogurt
Kosher salt and freshly ground black pepper

Diced tomato, for garnish

Preheat the oven to 400ºF and spray a rimmed baking sheet with cooking spray.

To make the burritos: Heat a large skillet over medium heat, and then add the oil. Once hot, add the onions and cook for 3-5 minutes until they begin to soften. Add the ground chicken to the pan and cook, stirring occasionally, until well browned. Stir in the garlic and tomato paste and cook for 30-60 seconds before adding in the beans. Add the water or broth, cumin, oregano, chili powder, cayenne, brown sugar and salt to taste (about 1 teaspoon). Reduce heat and simmer until most of the liquid has been absorbed.

Place 2 tablespoons of the cheese at the end of each tortilla and then spoon some of the chicken and bean mixture over the top. Fold the left and right sides of the tortilla in, and then roll the tortilla up, from the end closest to you, to the top. Place seam-side down on a baking sheet and lightly spray the tops of the burritos with cooking spray. Bake for about 20 minutes, until tortillas are golden brown and crispy.

Meanwhile, make the sauce. Place the poblanos directly over a gas burner. Using tongs, turn occasionally until skin is blackened on all sides. Place in a bowl and top with plastic wrap or a clean towel, until cool enough to handle. (Alternatively, you can roast the peppers under the broiler until all sides are well-charred.) Peel the peppers, remove the stems and seeds, and dice them.

Heat a small sauce pan over medium heat and melt the butter; stir in the flour and cook for an additional minute, stirring constantly. Slowly whisk in the chicken broth and then the diced poblano; continue to simmer, whisking frequently, until thickened. Stir in the sour cream/yogurt and warm through. Season to taste with salt and pepper. Serve the sauce over the baked burritos, topped with the chopped tomato.

Show and Tell: On My Mind



So, what's on my mind?

  1. Last week, our ladies' Bible study group finished up True Woman 101: Divine Design, by Mary Kassian & Nancy Leigh DeMoss.  It was a rich and powerful study, and to a woman, everyone who completed the study, wished it could've gone on longer.  Scripturally sound and deeply insightful, it gave fresh voice & vision to topics and passages that have long been on my heart... and knit them all together in such a challenging and relevant way for women of our generation.  If your church has a regular ladies' Bible study, I'd encourage you to request this study as an excellent resource for a future session.  I personally can't wait for True Woman 102, or 201-- whatever comes next!  I hope this great study will be followed up with many more biblically-faithful, challenging messages for women in this generation. 
  2. Submission-- it's a word fraught with misconceptions. 
  3. This week at our church, we're starting a new bible study about prayer.  I'll be facilitating/leading it, teaching from Scripture and leaning on "greats" like Andrew Murray.  After studying more last night about the connection between fruitful prayer & abiding in Christ, this morning I woke up with "Jesus, Keep Me Near the Cross" in my head... love that hymn!
  4. Last week, I did the great semi-annual household seasonal clothing exchange.  (It's been two years exactly since I had all of our kids' clothing in one place; while it was quite an undertaking, I am so so so so so so so so so very glad to have these things more sorted & organized.) While I may share details of my own approach/method at some future point, I definitely don't have time to do that right now.  Here's someone (a large-family-mom) who HAS recently shared tips/ideas about changing out kids' clothes.  
  5. One afternoon this week, I looked on my banking app and was shocked to find that our balance was $70,243,856.00.  I had fun being a $70 millionaire and dreaming up ways to give and use that much money, until they corrected our balance that evening, back to its normal level with not near so many numbers.  :)
  6. Yesterday in church, I was overwhelmed with emotion as I remembered and prayed for friends and contacts who live in difficult places, countries where it is difficult, illegal, and/or potentially life-threatening to live as a disciple of Jesus.  We are to remember those who are imprisoned!
  7. In an increasingly disconnected generation, what are Christians to do with this whole "love your neighbor" idea?  Here's a great article about practical, literal neighboring.  
  8. We have to fight HARD to keep our kiddos and ourselves from being overcommitted.  Here's an article from Sheila about that very thing.  As I came back to America last year after nearly 6 years away, this was probably one of the top three most shocking things I noticed about our American culture.  We say "no" a lot... but many (most?) of the people I see seem stressed, overcommitted, and lack relational connection in their lives... and a lot of it has to do with commitments made for very young children.

Yvonne Koné's black and white home

Hej! Hope you had a a lovely weekend? My family and I went on a trip to Söderåsen nature reserve. The trees all looked like they were on fire in shimmering shades of gold and red. aaaa, so beautiful. Today's inspiration comes from the Danish home of Yvonne Koné photographed by Line T Klein and styled by Stine Langvad for Elle Decoration DK. It has been deliberately photographed to show a beautiful black and white starkness, however in real life form I like to believe it has some soft, cosy blankets and warm lighting and a slow-cooked stew bubbling away on the stove.

Looking at the immaculate nature of the home (and most homes shown on here) it begs the question - are people really as tidy as this?! I had a chat with some friends about this the other day and we all concluded that our biggest 'untidy habit' , shamefully, was dropping our clothes on the bedroom floor at the end of the day. I know I'm doing it because I think 'I really should hang this up....but!' Eeek! Do you have a messy habit you can't shake?!

Soy Cilantro Roasted Potatoes

When Mary Ellen made these Soy Cilantro Roasted Potatoes for a recent recipe swap I immediately saved them to try when the temps dropped. Like Mary Ellen, I was intrigued by the use of soy sauce with potatoes and couldn't wait to see how they'd turn out.

The smell of these roasting was intoxicating. I served these with a roast chicken and they were delicious. Crispy on the outside and fluffy on the inside, with a little bit of a glaze from the reduced soy sauce.

Soy-Cilantro Roasted Potatoes

5 large red potatoes
2 tablespoons soy sauce
1 tablespoon olive oil
1 tablespoon fresh cilantro
Several shakes of garlic powder
Salt and pepper
Cooking spray

Preheat the oven to 450.

Rinse off the potatoes and cut into small wedges. Transfer the potatoes into a large bowl. Add the soy sauce, oil, cilantro, salt and pepper, and garlic powder. Toss well to coat. Spray a baking dish with cooking spray. Put the potatoes into the baking dish.

Bake for approximately 45 minutes or until the potatoes are soft.

Snow white

I am a big fan of white in the home (I live in Sweden after all!). I love the light it creates, I love the calmness and most of all I love the beautiful simplicity of it.
